I'm looking for a fresh light alternative (or extra!) pud for Xmas dinner.

Last year I did a lemon posset and it was good. Made ahead of time, served
chilled in a wine glass.

THis year maybe it would be nice to try a different one - nice, plus the
fact that I can't find last year's recipe!

I'd value ideas from people who post here please.

Cheers
Jane

One year we made a Nigel Slater inspired passionfruit roulade for alternate
Christmas pud, and it was perfect. A nice sharp lemon or orange curd, some
light sponge and lightly whipped cream and a tang from the passionfruit.
Light and refreshing.

I think it was from his Kitchien Diaries, but found links here:

We normally have Syllabub. We can't 'face' Xmas pudding on Xmas day and
normally keep it for Boxing day.

We serve the Syllabub with some light ginger finger biscuits, I forget
what they are called. (I always do the main Xmas dinner, Senior
Management does the pudding.)
