Not so much a recipe as a different way to cook carrots.

This recipe featured on Tom Kerridge's Christmas programme last night.

I scaled the quantities back a bit and cooked 2 carrots tonight and
had them with sea bass and potato. Very nice and very simple to do.

I also recently tried Heston Blumental's tip of putting a star anise
into a beef ragu (to eat with pasta) mix while it cooked. Very nice
and accentuated the flavours very well.

Did you scale the cooking time back as well? "Approximately 45 minutes"
is about three times as long as I cook mine to be tender! I don't think
I could pick them up without them falling apart after 45 mins. Of
course scaling the time back would also mean scaling the amount of water
back if you want the correct reduction.
