Noodles aren't something we eat very often, in fact other than in the
odd Chinese meal in a restaurant or take a way, or the odd 'noodle
snack', we don't as Senior Management doesn't care for them (she claims).

However, youngest has returned home (from Uni) and has been eating them-
and refers to Rice Noodles and Egg Noodles- but doesn't seem to know the
difference.

I've always assumed that Noodles are have some starch base- rice perhaps
in the case of Rice Noodles. But what are Egg Noodles?

I recall posting a query about Ramen Noodles some time back but I didn't
explore them further- mainly as Senior Management said she didn't like
noodles. Now she wants to try them!

Egg noodles are wheat flour and eggs, much like pasta except there is a
greater percentage of egg and are yellow in colour.

Rice noodles are made from rice flour and water, they are semi-transparent.

Egg noodles are generally used in drier dishes with just a sauce whilst
rice noodles are more usually in a broth with other things.

It does, thank you.

Now you mention it, I've noticed some noodles are semi-transparent, I'd
always assumed it was due the amount of starch or way they'd been cooked
(less starch, less dense).
