I've occasionally tried frying fish in tempura batter but the results
haven't been wonderful.

The problem is (I think) that I'm using an ordinary frying pan and
thus only one side gets cooked and that batter from the other side
runs off.

The obvious answer is a deep fat fryer but the smell and the issues
with disposing of that amount of oil put me off (I'm on a septic tank
for drainage). The next alternative seems to be the various fryers
that are enclosed and claim to use minimal oil but I can't help
thinking I would have the same problem there as with a fyring pan.

Suggestions?

Can't you find anyone who can use the old oil for bio-diesel?
