Cross-toasted between uk.food+drink.misc and The Shed

For Christmas I was given a nice little elliptical tin with the label:
The Bay Tree traditional Mulled Wine bundles.

Very nice smell, and I wouldn't quarrel with the composition (lemon
peel, orange peel, cassia bark, ginger, cloves and nutmeg.), but I'm
rather suspicious of the directions, viz:

"Steep one bundle in 75cl of red wine and 25cl of sweet cider. Heat
slowly and simmer for 15 mns. Add sugar to taste."

Simmering an alcoholic beverage for 15 minutes would (by my estimate)
remove about half the alcohol from it.

Thash no ushe for Chrishtmash libationsh.

Wot doth the panel goove? (It ain't how I do it...)

Agree, I usually replace that lost with a tot of ...

Well anything really but usually brandy (nor Brandy who is a nice girl
I'm told)

Oh and cooked wine is not quite as nice, unless nasty to start wiv.

If that is a concern, how about super-steeping a glassful, then when
concentrated, adding it back to the rest?

What I intend to try is to put 75cl of wine in a strong bottle
(sparkling perry bottle) along with the bouquet garni and topping-up
with cider or perry.

I'll warm the bottle in a water-jacket (asparagus pan) until all the
fizz has been driven off the perry/wine mixture, (Note: leaving carbon
dioxide dissolved in the liquid is dangerous!), screw down the lid of
the bottle and warm it to around 60°C, then allow it to cool, or better,
serve it immediately.

The screwed-down lid will prevent the alcohol from boiling-off, as
a) it's a lid, and
b) the bottle will act in the same way as a pressure-cooker and prevent
the constant boiling mixture that's itching to get going from building
up too much pressure in the bottle.

Do _not_ allow the bottle to become too hot, or you may be harbouring a
junior napalm fragmentation bomb on your cooker, ceiling, or even the
room above,so before _you_ try it, watch this space.
