Does anyone have a simple recipe for one of these?

The boss used to make a very delicious one, but the recipe has gone walking!

Well you gave this ng a kick start but you never got an answer to the
upside down cake.

Here's a simple one. The original is from the old (1970's) Betty
Crocker cookbook. This is the first one I tried and it turned out so
well, it's the only one I've ever made. I've made a few personal
changes to the ingredients.

Use a round cake pan...9 X 1.5 inches

The bottom layer:
In a bowl, mix up - 8 1/2oz can of crushed pineapple, drained
- 1/4 cup melted butter
- 1/2 cup packed light brown sugar

Mix and pour into a round cake pan... 9 x 1.5 inches

The top cake layer:
In a bowl, mix up - 1 1/4 cup all-purpose flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1/3 cup shortening or oil
- 1 egg
- 1 tsp vanilla extract

Mix all that up well and pour over pineapple stuff in the pan.
Bake at 350F for about 35 minutes or until toothpick inserted in
middle comes out clean

You can substitute other fruit too. And double the recipe for a 9x13x2
rectangle baking dish.

As I said, It's good and I've never sought a different recipe. If you
do give it a try, I hope you like it like I do. :)
