I just read that corned beef comes from cattle raised on maize. I always
though it referred to the corns of salt which was used to help preserve it.
Can anyone elucidate please?

Well this is the response I received from the US group:

It's salt-cured beef.

According to Wiki, "The term comes from the treatment of the meat with
"corns" of salt."
Perhaps you know of corned beef of another country, Rusty?

Nope - just what (IIRC) Radio 4's Food Programme said a while ago.

I'll see if Werner knows - he spent some of his childhood in the US.
