make bechamel sauce (onion, cloves, bay, mace, parsley stalks in
warmed milk, leave to stand. Thicken with roux)

slice aubergine in two, splash with olive oil and roast for 30 minutes

fry minced veal or pork with onion.

peel and core 6 *good* tomatoes, blitz. Warm.

tomato sauce on plate
aubergine
mince
bechamal
grate on chesse inc parmesan
under the grill

eat.

It's only the word for aubergine, nothing more. Many melanzane recipes have meat. Many don't.
