Chicken with Mushrooms

2 tblsps Olive oil
1 lb boneless, skinless chicken pieces
Flour for dusting (take care not to use too much flour or the sauce goes
gloopy)
2 oz pancetta
3/4lb small button mushrooms (or diced bigger ones)
2 large shallots chopped
1/2 pint chicken stock
2 tblspns white wine vinegar
2 oz frozen peas
small handful of chopped herbs
Seasoning

Heat 1 tblspn oil in skillet. Season and dust chicken with flour. Brown
on all sides and remove
Fry pancetta and mushrooms until softened then remove
Add final oil and cook shallots for 5 minutes. Add stock and vinegar and
bubble for 1-2 minutes
Return chicken, pancetta and mushrooms and cook approx 15 minutes
Add peas and herbs and cook for 2 minutes more.
Check chicken is cooked through.
Serve.
